CURRIED TOMATO & SWEET POTATO SOUP

Ingredients
• 1 sweet potato weighing 200g/7oz
• 1 tsp olive oil
• 1 garlic clove, crushed
• ½ onion, sliced
• 2 tsp medium curry powder
• 200g/7oz tinned chopped tomatoes
• 250ml/1 cup chicken or vegetable stock
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Gently heat a non-stick saucepan on the hob with the olive oil and sauté the garlic & onion for a few minutes until softened.
3 Stir through the curry powder and add the chopped tomatoes & stock.
4 Gently simmer for 5 minutes or until the sweet potatoes are tender.
5 Serve and serve.
CHEFS NOTE
Chopped fresh chives makes a great garnish to this thick soup.
