SHRIMP & FRESH PEA NOODLES

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  ½ onion, sliced

  ½ red pepper, deseeded & sliced

  1 garlic clove, crushed

  A pinch of crushed dried chillies

  150g/5oz raw, shelled king prawns/jumbo shrimp

  1 tbsp soy sauce

  2 tsp Thai fish sauce

  1 tsp lime juice

  75g/3oz fresh peas

  Low cal cooking oil spray

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the shredder blade to turn into spaghetti noodles.

2 Gently heat a large non-stick frying pan on the hob with a little low cal oil. Sauté the onion, peppers & garlic for a few minutes until softened.

3 Add the chillies, prawns, soy sauce, fish sauce & lime juice and cook for 3 minutes.

4 Add the noodles & fresh peas and move around the pan for 3-5 minutes or until everything is piping hot.

5 Season and serve.

 

CHEFS NOTE

Use chicken instead of prawns if you prefer.
