Ingredients
• Courgettes/Zucchini weighing 300g/11oz
• 1 garlic clove, crushed
• 200g/7oz raw, shelled king prawns/jumbo shrimp
• 1 tbsp sweet chilli sauce
• 1 tsp soy sauce
• 50g/2oz spinach leaves
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Top & tail the courgettes and use the shredder blade to turn into thin noodles.
2 Gently heat a large non-stick frying pan on the hob with a little low cal spray and sauté the garlic & prawns in the saucepan for a few minutes.
3 Add the sweet chilli sauce & soy sauce and stir well.
4 Add the courgette noodles & spinach and stir-fry for 3-4 minutes or until the prawns are cooked through and the noodles are tender
5 Season and serve.
CHEFS NOTE
Keep extra soy sauce to hand to suit your own taste.
