Ingredients
• 1 courgette/zucchini weighing 200g/7oz
• 1 sweet potato weighing 200g/7oz
• 1 tbsp lime juice
• 1 tbsp honey
• 1 tbsp olive oil
• Pinch of sea salt
• 4 spring onions/scallion, thinly sliced lengthways
• Freshly ground black pepper
Method
1 Top & tail the courgette, peel the sweet potato and use the chipper blade to turn both into thick spirals.
2 In a bowl mix together the lime juice, honey, olive oil & salt. Add the courgette & sweet potato spirals and toss together.
3 Sprinkle with the sliced spring onions and serve.
