Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  1 tbsp olive oil

  ½ red chilli, deseeded & finely chopped

  Zest & juice of ½ lime

  1 tsp honey

  Large pinch of sea salt

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the slicer/straight blade to turn into ribbons.

2 Place the ribbons in a bowl with the olive oil, chilli, lime juice, zest, honey and salt.

3 Combine really well to coat every inch of the courgette in the olive oil.

4 Leave to marinade for a few minutes and serve.

Eat as a light lunch or serve as a side to grilled fish or chicken.
