SWEET POTATO & SWEET PEPPER SAUCE

Ingredients

  1 sweet potato weighing 200g/7oz

  1 garlic clove

  1-2 tbsp water

  1 tbsp tomato puree/paste

  3 roasted peppers, from a jar

  ½ tsp dried basil

  Low cal cooking oil spray

  Salt & pepper to taste


 

Method

1 Peel the sweet potato and use the chipper blade to turn into thick spirals.

2 Cook the spirals in salted boiling water for 2-3 minutes. Drain and put to one side.

3 Place the garlic, water, puree, peppers & basil into a mini blender and blend until smooth (or finely chop everything together and combine if you don’t have a mini blender).

4 Gently heat a large non-stick frying pan on the hob with a little low cal spray, add the pepper sauce and cook for a couple of minutes. Add the spirals to the pan, combine well and cook until everything is piping hot

5 Check the seasoning and serve.

 

CHEFS NOTE

Fresh chopped basil complements this dish perfectly.
