Ingredients
• 1 sweet potato weighing 200g/7oz
• ½ red onion, sliced
• ½ tsp ground coriander/cilantro
• Large pinch of sea salt
• 2 tbsp freshly chopped coriander/cilantro
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Cook the spirals in salted boiling water for 2-3 minutes. Drain and put to one side.
3 Gently heat a large non-stick frying pan on the hob with a little low cal spray, add the onions and cook for a few minutes until softened.
4 Stir through the ground coriander & salt and cook for a minute longer (add a splash of water if you need to loosen the pan up).
5 Add the spirals to the pan with a little more low cal spray, combine well and cook for a few minutes until everything is piping hot.
6 Stir through the chopped coriander. Check the seasoning and serve.
