FETA CHEESE ‘SPAGHETTI’

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  1 tsp olive oil

  1 garlic clove, crushed

  1 tbsp pine nuts

  4 spring onions/scallions, finely sliced

  50g/2oz low fat Feta cheese, crumbled

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the shredder blade to turn into spaghetti noodles.

2 Gently heat a large non-stick frying pan on the hob with the olive oil and sauté the garlic for a minute or two until softened.

3 Add the spaghetti noodles & pine nuts and move around the pan for 3-5 minutes or until everything is piping hot.

4 Tip the ‘pasta’ into a bowl. Sprinkle over crumbled the feta cheese and spring onions.

5 Season and serve.

 

CHEFS NOTE

Try serving with a little freshly chopped mint.
