SIMPLE MINT & OLIVE ZUCCHINI SALAD

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  6 pitted black olives, finely chopped

  6 cherry tomatoes, finely chopped

  Zest & juice of ¼ lemon

  1 tbsp olive oil

  Pinch of salt

  1 tbsp freshly chopped mint

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the slicer/straight blade to turn into ribbons.

2 In a bowl mix together the olives, chopped tomatoes, zest, lemon juice, olive oil, salt and mint to make a dressing.

3 Add the ribbons to the bowl and toss together so that everything is thoroughly coated with the dressing.

4 Season and serve.

 

CHEFS NOTE

This is even better chilled and left to marinade for 20 minutes.
