SPICED SPINACH & SPIRALIZED SWEET POTATOES

Ingredients
• 1 sweet potato weighing 200g/7oz
• ½ onion, sliced
• ½ tsp freshly grated ginger
• 1 garlic clove, crushed
• 1 tsp garam masala
• ½ red chilli, deseeded & finely sliced
• 100g/3½oz spinach
• 1 tbsp low fat/half and half cream
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Cook the spirals in salted boiling water for 2-3 minutes. Drain and put to one side.
3 Gently heat a large non-stick frying pan on the hob with a little low cal spray. Add the onions, ginger, garlic, garam masala & chopped chilli and cook for a few minutes until softened (add a splash of water to the pan if you need to loosen it up).
4 Add the sweet potato spirals and spinach to the pan and cook until the potatoes are piping hot and the spinach is wilted.
5 Remove from the heat, stir through the cream and serve immediately.
CHEFS NOTE
Use curry powder if you don’t have garam masala.
