ANCHOVY & CHILLI ‘PASTA’

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  2 tsp olive oil

  5 anchovy fillets, drained

  ½ onion, sliced

  ½ tsp crushed chilli flakes

  2 tsp lemon juice

  ½ tsp dried thyme

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the shredder blade to turn into spaghetti noodles.

2 Gently heat a large non-stick frying pan on the hob with the olive oil.

3 Add the anchovy fillets and onions and sauté for a few minutes until softened.

4 Add the chilli flakes, lemon juice & thyme and continue cooking & stirring until the anchovy fillets begin to dissolve.

5 Add the spaghetti noodles and move around the pan for 3-5 minutes or until everything is piping hot.

6 Season and serve.

 

CHEFS NOTE

It’s fine to use anchovy paste in place of fillets.
