DRESSED CARROT & PARMESAN SALAD

Ingredients
• Carrots weighing 300g/11oz
• 1 tbsp horseradish sauce
• 1 tsp Dijon mustard
• 1 tbsp olive oil
• 1 tbsp balsamic vinegar
• Pinch of sea salt
• 50g/2oz spinach
• 25g/1oz Parmesan cheese shavings
• Freshly ground black pepper
Method
1 Top, tail & peel the carrots and use the shredder blade to turn into thin spirals.
2 In a bowl mix together the horseradish sauce, mustard, oil, vinegar & salt. Add the carrot spirals and toss together.
3 Place the spinach leaves in a shallow bowl Load the dressed salad on top and arrange the Parmesan shavings.
CHEFS NOTE
Use less horseradish if you want to reduce the heat!
