BEAN & HALLOUMI RIBBON SALAD

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  125g/4oz tinned Borlotti beans, rinsed & drained

  Zest & juice of ¼ lemon

  1 tbsp olive oil

  Pinch of salt

  50g/2oz sliced low fat halloumi cheese

  1 tbsp freshly chopped coriander/cilantro

  Salt & pepper to taste


 

Method

1 Preheat the grill to a medium/high heat

2 Top & tail the courgettes and use the slicer/straight blade to turn into ribbons.

3 Toss the ribbons in a bowl with the borlotti beans, zest, lemon juice, olive oil & salt.

4 Place the halloumi slices under the grill and cook for a minute or two on each side until bubbling and golden brown.

5 Tip the courgette and bean salad into a bowl. Place the grilled cheese on top and sprinkle with chopped coriander.

6 Season and serve.

 

CHEFS NOTE

Borlotti beans are good but use any type of tinned bean you prefer.
