PESTO CHICKEN ‘PASTA’

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  ½ onion, sliced

  100g/3½oz chicken breast, sliced

  1 tbsp green pesto sauce

  2 tsp grated Parmesan cheese

  Low cal cooking oil spray

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the shredder blade to turn into spaghetti noodles.

2 Gently heat a large non-stick frying pan on the hob with a little low cal spray.

3 Add the onions and sliced chicken and cook for a few minutes until the onions are softened and the chicken is cooked through.

4 Stir through the pesto and then add the spaghetti noodles. Move about the pan for a couple of minutes until everything is well combined and piping hot (add a splash of water to the pan if you need to loosen it up).

5 Tip into a bowl, sprinkle over the Parmesan cheese, season and serve.
