CHICKEN & PEPPER ‘NOODLE’ STIR-FRY

Ingredients
• Courgettes/Zucchini weighing 300g/11oz
• 2 tsp olive oil
• 150g/5oz chicken breast, thinly sliced
• 1 garlic clove, crushed
• ½ onion, chopped
• 1 red pepper, deseeded & sliced
• 60ml/½ cup chicken stock
• 1 tbsp soy sauce
• Salt & pepper to taste
Method
1 Top & tail the courgettes and use the shredder blade to turn into noodles.
2 Gently heat a large non-stick frying pan on the hob with the olive oil and sauté the sliced chicken, garlic, onion & peppers for 3 minutes until softened.
3 Add the stock & soy sauce, increase the heat and cook for 2-3 minutes to reduce about half of the stock.
4 Add the noodles and move around the pan for 3-5 minutes or until the courgette noodles are tender and the chicken is cooked through.
5 Season and serve.
CHEFS NOTE
Add extra veg if you like: tenderstem broccoli/broccolini and sugar snap peas make good additions.
