HONEY CHICKEN & CRUNCHY CARROT STIR-FRY

Ingredients

  Carrots weighing 300g/11oz

  2 tsp olive oil

  150g/5oz chicken breast, thinly sliced

  1 garlic clove, crushed

  1 tsp freshly grated ginger

  ½ onion, chopped

  125g/2oz tenderstem broccoli/broccolini, finely chopped

  1 tsp clear honey

  1 tsp lime juice

  1 tbsp soy sauce

  Salt & pepper to taste


 

Method

1 Peel, top & tail the carrots and use the shredder blade to turn into thin threads.

2 Gently heat a large non-stick frying pan on the hob with the olive oil and sauté the chicken, garlic, ginger, onion & broccoli for 5 minutes until softened (add a splash of water to the pan if you need to loosen it up).

3 Stir through the honey, lime juice & soy sauce and increase the heat. Add the carrots and move around the pan for 2 minutes or until the chicken is cooked through.

4 Season and serve.

 

CHEFS NOTE

The carrots will have a little crunch left but you could have them raw piled on top if you prefer.
