SWEET POTATO WITH SPANISH SAUCE

Ingredients
• 1 sweet potato weighing 200g/7oz
• ¼ red onion, sliced
• 1 garlic clove, crushed
• 50g/2oz sliced chorizo sausage, chopped
• 2 tbsp tomato puree/paste
• ½ tsp paprika
• 120ml/½ cup red wine
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Cook the spirals in salted boiling water for 2-3 minutes. Drain and put to one side.
3 Meanwhile gently heat a large non-stick frying pan on the hob with a little low cal spray. Add the onions, garlic & chorizo and gently sauté for a few minutes until softened.
4 Stir through the puree and paprika. Add the wine and increase the heat until the wine begins to boil.
5 Reduce the heat and simmer for about 5 minutes or until the wine has reduced down by half.
6 Add the spirals to the frying pan. Combine well and cook for a few minutes until everything is piping hot.
7 Check the seasoning and serve.
CHEFS NOTE
Use chicken stock in place of wine if you wish.
