CHICKEN & SESAME CUCUMBER NOODLES

Ingredients
• 1 cucumber
• 2 tbsp olive oil
• 1 tsp sesame oil
• 1 tsp freshly grated ginger
• 2 tbsp soy sauce
• 8 spring onions/scallions, finely chopped
• 150g/5oz cooked chicken breast, shredded
• 75g/3oz asparagus spears, thickly sliced
• Pinch of dried crushed chillies
• Salt & pepper to taste
Method
1 Top, tail & peel the cucumber and use the shredder blade to turn into thin noodles.
2 Mix together the olive oil, sesame oil, ginger and soy sauce to make a dressing.
3 Plunge the asparagus in salted boiling water and cook for two minutes. Drain and refresh in a sieve with cold water.
4 Combine the asparagus and spring onions with the dressing. Toss with the cucumber noodles and load the shredded chicken over the top.
5 Sprinkle with crushed chillies and serve.
CHEFS NOTE
Add more soy sauce and chillies if you wish.
