CHICKEN & SESAME CUCUMBER NOODLES

Ingredients

  1 cucumber

  2 tbsp olive oil

  1 tsp sesame oil

  1 tsp freshly grated ginger

  2 tbsp soy sauce

  8 spring onions/scallions, finely chopped

  150g/5oz cooked chicken breast, shredded

  75g/3oz asparagus spears, thickly sliced

  Pinch of dried crushed chillies

  Salt & pepper to taste


 

Method

1 Top, tail & peel the cucumber and use the shredder blade to turn into thin noodles.

2 Mix together the olive oil, sesame oil, ginger and soy sauce to make a dressing.

3 Plunge the asparagus in salted boiling water and cook for two minutes. Drain and refresh in a sieve with cold water.

4 Combine the asparagus and spring onions with the dressing. Toss with the cucumber noodles and load the shredded chicken over the top.

5 Sprinkle with crushed chillies and serve.

 

CHEFS NOTE

Add more soy sauce and chillies if you wish.
