Ingredients
• 1 sweet potato weighing 200g/11oz
• 1 tsp olive oil
• ½ onion, sliced
• 1 garlic clove, crushed
• 125g/4oz lean mince/ground beef
• 200g/7oz tinned chopped tomatoes
• ½ tsp dried thyme or oregano
• 1 tsp Worcestershire sauce/A1 steak sauce
• 1 tbsp tomato puree/paste
• 60ml/¼ cup vegetable stock
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Heat a non-stick frying pan with the olive oil and sauté the onion & garlic for a few minutes. Add the beef and brown for a couple of minutes.
3 Stir through the chopped tomatoes, thyme, Worcestershire sauce, puree & stock.
4 Increase the heat a little and leave to simmer for 10-15 minutes, stirring coocasionally.
5 Meanwhile cook the sweet potato spirals in salted boiling water for 1-2 minutes.
6 Drain and place in a bowl with the ragu beef poured over the top.
7 Season and serve.
CHEFS NOTE
Stir the cooked sweet potatoes through the ragu before serving if you prefer it that way.
