Ingredients
• 1 sweet potato weighing 200g/7oz
• 150g/5oz cooked chicken breast, shredded
• ½ onion, chopped
• 1 garlic clove, crushed
• 1 tbsp red pesto sauce
• 2 plum tomatoes, quartered
• 2 tsp grated Parmesan cheese
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Heat a non-stick frying pan with the olive oil and sauté the onion & garlic for a few minutes.
3 Meanwhile cook the sweet potato spirals in salted boiling water for 1-2 minutes.
4 Drain the water from the pan and stir through the pesto sauce and chicken on a gentle heat for a minute or two.
5 Add the sautéed garlic and onions along with the fresh tomatoes. Combine well and serve straight away in shallow bowl.
CHEFS NOTE
Lose the chicken if you like and serve as a vegetable side.
