1 BAG (12 OZ) FRESH BROCCOLI FLORETS
2 TSP BUTTER
4 SWEET POTATOES (ABOUT 7 OZ EACH), SCRUBBED AND PIERCED WITH A FORK
½ TSP EACH GROUND GINGER AND SALT
¼ TSP EACH GROUND CINNAMON AND PEPPER
4 CENTER-CUT BONELESS PORK LOIN CHOPS (5 TO 6 OZ EACH)
NONSTICK SPRAY
FRESH APPLE SLICES (OPTIONAL)
Heat a ridged grill pan that’s at least 17½ x 11½ in. or a barbecue grill.
Meanwhile, place broccoli in a single layer on a 14-in.-long sheet of foil; fold up sides. Add cup water; dot broccoli with butter. Cover with another sheet of foil; fold sides of top and bottom sheets together twice to seal.
Microwave sweet potatoes until tender when pierced.
Meanwhile, mix ginger, salt, cinnamon and pepper; sprinkle on both sides of chops. Spray chops with nonstick spray. Place chops at one side of grill pan or barbecue grill and grill 5 minutes.
Turn chops over. Place foil packet on other side of grill pan or barbecue grill and grill 5 to 6 minutes until chops are barely pink in the middle and broccoli is crisp-tender when packet is pierced. Open packet carefully to let steam escape; serve with chops, potatoes and apple slices.
