Make Ahead, Quick Fix
Prep Time: 10 Minutes Start to Finish: 2 Hours 10 Minutes 4 servings
1 Chill 4 stemmed glasses in freezer. Pour pomegranate juice into 8 sections of ice cube tray, 1 tablespoon in each; freeze until solid, about 2 hours.
2 Fill cocktail shaker or small pitcher with ice. Add vodka, liqueur and lime juice; shake or stir to blend and chill.
3 Place 2 pomegranate ice cubes in each chilled glass. Pour vodka mixture into glasses, straining out ice. Fill glasses with champagne. Garnish with mint.
