Chicken—everyone loves it. But when I am cooking chicken, I consider it my goal to make a dish that is worth the time and effort and not just another familiar standard. In this chapter you’ll find chicken dishes from all over the globe, although I seem to have a special affinity for Latin ingredients like chiles and cilantro. When you crave comfort food of the highest order, I recommend the spice-rubbed chicken wings or my quick-roasted chicken served with mascarpone polenta here and here. But no matter which recipe you choose, always buy the best poultry (preferably locally sourced and organically raised) that you can afford. You will be able to taste the difference.
