- 6 ripe plantains, peeled and cut into chunks
- 1 1/2 cups water
- 1 15-ounce can coconut milk
- 1/2 cup maple syrup
- 1/2 cup chopped almonds
- 1/4 cup butter
- 1 teaspoon cinnamon
- Mix all ingredients in the slow cooker.
- Cover and cook on low for 4 hours.
- Serve with coconut cream if desired.
