- 1 1/2 pounds chicken thighs
- 6 ounces sliced mushrooms
- 1 cup uncooked white rice
- 1 cup full fat coconut cream
- 1 cup chicken broth
- 1/4 cup water
- 1 1/2 teaspoon salt
- Season chicken with salt.
- Stir together the rest of the ingredients in the slow cooker. Place chicken on top.
- Cook on low for 6-7 hours.
- Shred chicken and serve.
