Fennel Orange Chicken

- 1 1/2 pounds chicken breast
- 3 large carrots, peeled and diced
- 1 fennel bulb, cored and thinly sliced
- 1 orange, thinly sliced
- 3 tablespoons extra virgin olive oil
- 1 tablespoons apple cider vinegar
- 1 teaspoon herbes de provance
- 3/4 teaspoon salt
- Season chicken with salt.
- Layer fennel in the bottom of the slow cooker. Drizzle with vinegar. Then add chicken. Drizzle with oil. Top with carrots, herbs and orange slices.
- Cook on low for 6-8 hours.
- Shred meat and serve.
