- 1 1/2 pounds chicken breast
- 1 cup full fat coconut milk
- 1/3 cup smooth peanut butter
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon grated fresh ginger
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- Season chicken with salt
- In a small bowl, combine the rest of the seasoning ingredients.
- Place chicken in slow cooker and pour the mixture over chicken.
- Cook on low for 6-8 hours.
- Shred meat and serve.
