- 4 pounds boneless chuck roast
- 1 cup beef broth
- 4 large carrots, peeled and sliced
- 2 celery stick cut into pieces (omit if can't tolerate)
- 2 onions, quartered (omit if can't tolerate)
- 1 sprig thyme
- 2 bay leaves
- 1 1/2 teaspoon salt
- Season the beef with salt.
- In a pan, brown the beef on both sides.
- Place the vegetables in the slow cooker, followed by the beef, herbs and broth.
- Cover and cook on low for 8 hours.
- Shred meat and serve with liquid in the slow cooker.
