Cuban Pork

- 1 whole pork shoulder roast, about 3 pounds
- 1 small onion, sliced (omit if can't tolerate)
- 1/2 cup fresh orange juice
- 1/2 cup fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- Rub the pork shoulder with salt and place in the slow cooker. Top with onion.
- In a small bowl, combine the rest of the ingredients. and pour over the pork.
- Cover and cook on low for 8-10 hours.
- Shred meat and serve.
