Traditional cream cheese is made with heavy cream, contains mostly unhealthy fat, and lacks protein. This recipe provides you with a delicious, creamy, and savory tofu spread that is composed of lean protein and healthy fats and sandwiched between fiber-full complex carbohydrates to keep you satisfied. Enjoy the spread with tomato, spinach, and avocado on Whole Wheat Seed Crackers or on toasted, crispy whole wheat bread.
½ cup Tofu-Chive Cream Cheese
½ medium ripe avocado
1 medium tomato, sliced
1 cup fresh spinach leaves
4 slices low-sodium whole wheat bread, toasted
Add ¼ cup of cream cheese, ¼ of the avocado, ½ of the medium sliced tomato, and ½ cup of spinach each to two slices of toast. Top with the remaining slice of toast and enjoy.
SUBSTITUTION TIP: Swap the spinach for alfalfa sprouts or pea shoots for a refreshing crunch and a sweet, grassy flavor addition.
