This is a vegan twist on the traditional Indian lassi made with yogurt. It combines three of my favorite fruits, mango, coconut, and dates, with one of my favorite spices, cardamom—a good source of colon-cleansing fiber, bone-protecting manganese, and cancer-fighting compounds. This drink is pure bliss. I think you’ll agree!

1 cup coconut milk (light or regular)

2 cups frozen mango chunks

½ banana

½ teaspoon freshly squeezed lemon juice (about ⅛ lemon)

1 Medjool date, pitted

Pinch sea salt

¼ teaspoon ground cardamom

In a blender, combine all ingredients. Blend until smooth. For a thinner drink, add 1 additional tablespoon at a time of coconut milk or water. Serve immediately.
