SWEET POTATO SMOOTHIE

I whipped up this smoothie when I wanted to create something interesting and healthy for dessert with what I had on hand. I grabbed what was left in the fruit bowl and voilà! It turned out to be one of my best smoothies ever. Not only because it’s delicious, but because sweet potatoes are so nutritious. Their ageless antioxidants include beta carotene, which helps reduce the risk for cancer, and vitamin A, which decreases the risk for vision deterioration as we get older.

3 cups Vanilla Almond Milk (here)

½ frozen banana

1 medium sweet potato, roasted, peeled, and mashed

1 tablespoon chopped walnuts

In a blender, add almond milk, banana, and sweet potato. Blend until smooth and creamy. To serve, pour into glasses and sprinkle chopped walnuts on top.
