SPARKLING BASIL LIMONADE

This light, refreshing drink was inspired by the only soda we ever had in the house growing up: ginger ale. I think it sparked my lifelong love of sparkling water.

8 large basil leaves

2 tablespoons freshly squeezed lime juice (about 1 medium lime)

2 tablespoons freshly squeezed lemon juice (about 1 medium lemon)

1 teaspoon coconut sugar (or more, to taste)

3 cups sparkling water

1 cup ice cubes

In a small pitcher, combine the basil, lime juice, lemon juice, and sugar. Use a wooden spoon to press down on and slightly bruise the leaves so more of the flavor will be incorporated into the drink. Add the sparkling water and ice cubes. Stir and serve immediately.
