This drink is the true secret to my glow! I drink about 2 cups almost every day. Dandelion greens are nutrient powerhouses, especially high in skin-nurturing vitamin A, vision-protecting lutein, bone-strengthening vitamin K, and colon-cleansing fiber. And of all the dark leafy greens I eat, dandelions just do something extra for me. When I drink it in the morning, it completely calms my mood and makes me feel balanced and clear as I start my day. I call it my liquid sunshine. Dandelion greens are typically available at health-food stores.
1 bunch dandelion greens (about 30 to 40 small leaves or 10 to 20 large leaves)
⅓ cup freshly squeezed lemon juice (about 1 large lemon)
Place dandelion greens, lemon juice, and 2 cups water in a high-speed blender. Blend on highest speed until the greens turn to liquid, 5 to 10 seconds. For a cold drink, add in 3 to 4 ice cubes and blend for another few seconds. Serve immediately.
