Packed with protein, this drink is great on its own or paired with Vanilla Cinnamon Granola with Almonds (here) or Apple Raisin Granola with Pumpkin Seeds (here).

1½ cups raw cashews, soaked in water for 1 hour and drained

3 cups coconut water

3 Medjool dates, pitted

½ teaspoon vanilla extract

Place all ingredients in a blender and blend on the highest speed. For thinner nut milk, strain the liquid through a fine sieve or cheesecloth. Chill and serve.
