Back in my early vegan days, before smoothie bowls were a thing, I used to make fruit soup. It was basically a very liquid smoothie that I used to pour in a bowl, top with things like granola, nuts, or fruit, and eat with a spoon. Twenty years later and smoothie bowls are everywhere. And although they’re thicker than what I used to make, I still think my fruit soup is a contender. But whatever you call it, it makes for a delicious and ageless breakfast. The blueberries in this recipe help improve brain functioning and slow cognitive decline, and the chia seeds help make skin smoother and reduce wrinkling.

FILLING

1 medium apple, cored and cut into chunks

1 ripe frozen banana, or 1 avocado, pitted

1 cup blueberries, fresh or frozen

1 tablespoon almond or cashew butter

TOPPINGS

1 mango, peeled and cubed

8 strawberries, thinly sliced

2 tablespoons unsweetened coconut flakes

1 teaspoon chia seeds

Place all filling ingredients in a blender with 3 cups water and blend until smooth and creamy. Spoon into serving bowls and add toppings in parallel rows. Serve immediately.

TIPS For a sweeter smoothie base, add 1 to 2 pitted Medjool dates.

You can also add Vanilla Cinnamon Granola with Almonds (here) as a topping for a great crunch.
