The magic ingredient in this recipe is thyme. This flavorful, aromatic herb elevates these home fries to something memorable. They’re a must-have addition to your brunch menu.

4 medium red potatoes, peeled and thinly sliced (about ¼ inch thick)

3 tablespoons extra-virgin coconut oil

1 medium yellow onion, chopped

3 garlic cloves, finely chopped

2 teaspoons dried thyme

¼ teaspoon sea salt

⅛ teaspoon black pepper

⅛ teaspoon cayenne pepper (optional)

In a large pot, bring 1½ cups water to a boil. Place a steamer insert in the pot, and steam potato slices for 10 to 15 minutes or until just tender, but not cooked completely. (Otherwise, they will fall apart when sautéing.) Set steamed potato slices aside.

In a large skillet, heat 1 tablespoon oil over medium heat. Add onions and sauté for 3 minutes or until translucent, stirring several times. Add the garlic and sauté for 1 to 2 more minutes, stirring constantly. Remove the onions and garlic from the pan and set aside. In the same skillet, heat the remaining oil over medium heat. Add the potato slices, onions, and garlic and sauté for 15 minutes or until golden brown. Stir in the thyme, salt, black pepper, and cayenne pepper (if using). Sauté for 1 to 2 more minutes. Serve hot.
