PROTEIN DREAM
The beauty of these protein-hearty bites is that they’re oven-baked, so they give you crispy tofu without frying. The marinade makes them spicy, and they bake up deliciously firm and chewy. They can be eaten as they are, as a hot or cold snack, or added to salads, stir-fries, pastas, wraps… you name it!
1 tablespoon extra-virgin olive or sesame oil
1 tablespoon coconut aminos or low-sodium tamari
¼ teaspoon turmeric
¼ teaspoon cayenne pepper
½ teaspoon all-purpose dried herbs and vegetables seasoning blend
Dash hot sauce, to taste
1 block extra-firm tofu, cut into ½-inch cubes
2 tablespoons nutritional yeast
Preheat oven to 400ºF.
In a large bowl, whisk together oil and coconut aminos with 2 tablespoons water. Whisk in remaining seasonings. Place tofu cubes in the bowl and gently fold, making sure all the cubes are coated. Sprinkle on nutritional yeast and gently fold, making sure all the cubes are coated. Spread the cubes onto the baking sheet. Bake for 15 minutes and then flip cubes. I use steel tongs or a fork to turn over each cube. Bake for 10 more minutes. Taste and adjust seasonings, as needed. Serve hot or at room temperature.
TIP Tempeh chopped in cubes can be used instead of tofu.
