BAKED SWEET POTATO FRIES
with GARLIC AND TRUFFLE OIL

With this recipe, we wanted to try a little something different with sweet potato fries. We love the mix of the sweetness of the sweet potato with the savory of the truffle oil and garlic. It’s an unusual but delicious combination.

2 medium sweet potatoes, cut into slices ¼ inch thick and the length of the potato

4 tablespoons truffle oil

1 tablespoon garlic powder

½ teaspoon sea salt

Freshly ground black pepper, to taste

Preheat oven to 425°F.

In a large bowl, combine all the ingredients. Mix until the sweet potatoes are thoroughly coated. Place the sweet potatoes on a baking sheet lined with parchment paper in a single layer without touching each other. You might need to use more than one tray. Bake potatoes for 15 minutes, then flip them and bake until crispy at the edges, about 10 more minutes. Serve hot.

TIP You can use olive oil as a less expensive substitute for truffle oil.
