If you’re craving a warming, comforting soup that tastes good to your soul, this is it. Black beans are higher in antioxidants than most beans, which means they’re most effective against cell-damaging free radicals that can result in premature aging. Their high fiber content also lowers the risk of chronic diseases and increases longevity.
1 tablespoon extra-virgin olive oil
1 large carrot, peeled and sliced into thin rounds
½ red onion, coarsely chopped
4 garlic cloves, finely chopped
3 cups precooked black beans or 2 (15-ounce) cans or cartons
2 tablespoons low-sodium tamari
2 tablespoons hot salsa (see Tip)
7 cherry tomatoes, halved
2 tablespoons nutritional yeast
½ teaspoon cayenne pepper
1 avocado, pitted and cut into chunks
3 tablespoons finely chopped fresh cilantro

In a large skillet, heat the oil over medium heat. Stir in the carrots, onions, and garlic and sauté until the onions are translucent, 3 to 5 minutes. In a large pot, bring 2 cups water to a simmer over low heat. Add the beans, carrots, onions, and garlic, plus the tamari, salsa, tomatoes, nutritional yeast, and cayenne pepper. Simmer over low heat, covered, for about 10 minutes. Serve hot, topped with avocado chunks, cilantro, and a dollop of Cashew Sour Cream. This soup freezes well in airtight containers, so it can be made in large batches and stored for lunch and dinner during the week.
