LONGEVITY LOVER

PROTEIN DREAM

STRONG BONES

Edamame is a young soybean high in protein, fiber, calcium, and iron—all key nutrients for better health and longevity. You’ll love the crunchy yet soft and smooth consistency of the edamame in this recipe, which is coated with a spicy sesame oil dressing and sprinkled with black sesame seeds, which help protect bone health. It tastes great tossed with whole-grain pasta noodles, like our Buckwheat Soba Bowl recipe (here) or with our Citrusy Dandelion Greens Salad (here).

2 cups edamame, cooked according to package directions

1 tablespoon toasted sesame oil

1 tablespoon sesame seeds (black, brown, or mixed)

1 teaspoon sea salt

2 tablespoons finely chopped scallions

Cayenne pepper, to taste

In a large bowl, combine all the ingredients. Mix thoroughly and serve at room temperature.
