VISION MISSION

The sweet and savory combination of currants and Swiss chard, combined with the toasty flavor of baked walnuts, make this dish a standout. Swiss chard is also a standout for being high in the antioxidants lutein and zeaxanthin, which are two of your best protectors against macular degeneration as you get older. This dish pairs well with Spiced and Sautéed Sweet Potatoes (here) and Peach BBQ Tempeh (here).

⅓ cup raw walnuts, roughly chopped

1 bunch Swiss chard

¼ cup currants

1 tablespoon extra-virgin olive oil

¼ teaspoon sea salt or more, to taste

Freshly ground black pepper, to taste

Preheat oven to 350°F.

Line a baking sheet with parchment paper. Place walnuts on the lined sheet in a single layer and bake until golden brown, about 8 minutes. Place chard and 3 tablespoons water in a large pot. Turn heat to medium, cover, and simmer about 5 minutes, stirring often, until greens are wilted. Remove from heat and stir in the currants, walnuts, oil, salt, and pepper. Mix until thoroughly combined. Serve hot.
