These quick and easy green beans and immune-boosting shiitake mushrooms are oven-broiled (instead of stir-fried or sautéed) for a lovely, smoky flavor. They’re finished with crunchy raw almonds and a kick of hot sauce. This dish pairs well with Peach BBQ Tempeh (here), Herbed Potato Salad (here), and Mac and Cheese (here).

1 pound string beans

2 cups shiitake mushrooms, thinly sliced

¼ medium white onion, very finely chopped (about 2 tablespoons)

1 tablespoon extra-virgin olive oil

1 teaspoon sea salt

Freshly ground black pepper, to taste

¼ cup raw almonds, roughly chopped

Hot sauce

Preheat oven to broil.

After washing the string beans and mushrooms, make sure to pat them dry thoroughly so they don’t steam in the broiler. In a large bowl, combine the string beans, mushrooms, onion, oil, salt, and pepper. Mix thoroughly. Place the mixture on a baking sheet lined with parchment paper that is large enough to hold the ingredients in a single layer. Cook under the broiler until browned, 5 to 8 minutes, checking often to make sure they don’t burn. Top with almonds and serve with hot sauce.
