Pop these roasted and seasoned Brussels sprouts in your mouth and taste the layers of flavor unleashed: fresh, charred, sweet, tangy, savory, and spicy. Simple and easy to prepare, these Brussels sprouts make a healthy and delectable side dish or snack. As a heart-healthy and cancer-fighting cruciferous vegetable, Brussels sprouts are nutrition powerhouses for health and longevity. This dish goes well with Mac and Cheese (here) and Savory Vegetable Quiche (here).

1 pound Brussels sprouts, cut in half, ends trimmed and yellow leaves removed

3 tablespoons extra-virgin olive oil

3 garlic cloves, finely chopped

½ teaspoon sea salt

Freshly ground black pepper, to taste

2 tablespoons balsamic vinegar

Preheat oven to 400°F.

In a large bowl, combine the Brussels sprouts, oil, garlic, salt, and pepper, making sure they’re evenly coated. Place Brussels sprouts on a baking sheet lined with parchment paper. Roast until crisp and golden brown on the outside and tender on the inside, 20 to 30 minutes. Shake the pan about every 10 minutes to be sure they’re evenly roasted. Remove from the oven, immediately drizzle with vinegar, and toss until evenly coated. Sprinkle with additional salt and pepper, if needed. Serve hot.
