These tender, iron-rich, and heart-healthy leaves are divine when lightly sautéed with just a few simple seasonings to enhance the subtle, aromatic flavor of the greens and they take just a few minutes to prepare. They’re also delicious raw when added to a salad or tossed into a morning smoothie. This dish goes well with Saffron Rice (here) and Chana Masala (here).

1 tablespoon sesame oil

4 garlic cloves, finely chopped

2 bunches beet greens

2 tablespoons coconut aminos or low-sodium tamari

½ teaspoon red pepper flakes

In a large skillet, heat the oil over medium heat. Stir in the garlic and sauté until translucent, 3 to 5 minutes. Stir in the greens, coconut aminos, and pepper flakes and sauté for 1 to 2 more minutes. Beet greens wilt quickly, so be careful not to overcook them. Serve hot.
