These fruity ice pops are the ultimate summertime treat for kids and adults. The rainbow of antioxidant-rich fruits makes them a delicious example of Health Is in the Hue. Make them ahead of time so you’ll have them on hand whenever the mood (or heat) strikes.
1 kiwi, peeled and cut into thin slices
1 peach, peeled and diced
½ cup blackberries
¼ medium watermelon, seedless or seeds removed, cut into chunks (about 3 cups)
½ pound fresh strawberries, hulls removed
Place the kiwi, peaches, and blackberries equally (or unequally) in six ice pop molds. In a blender, combine the watermelon chunks and strawberries, and blend until smooth. Pour the purée into the molds. Freeze until solid, about 4 hours or more. Remove from the molds and serve immediately.
