SMOOTH SKIN
This recipe is a light and refreshing take on traditional ambrosia, without the heavy cream or marshmallows. In other words, it’s a beautiful fruit salad topped with coconut flakes and nuts that you eat for dessert. And after all is said and done, sometimes a taste of fruit is the perfect ending to a really good meal.
1 banana, cut into ⅛-inch-thick slices
2 kiwis, peeled and cut into ⅛-inch-thick slices
Sections from 2 peeled blood oranges
1 cup red grapes, halved
½ medium pomegranate, seeds only (about ½ cup)
½ cup dried, unsweetened coconut flakes
¼ cup chopped raw pecans, chopped
In a large bowl, combine the banana, kiwis, oranges, grapes, and pomegranate seeds. Transfer to a glass bowl with a top and chill in the refrigerator for 30 minutes. Top with coconut flakes and pecans. Serve immediately.
