Double Peach Parfait with Gingersnaps

½ cup coarsely crushed gingersnap cookies
¼ cup chopped pecans, toasted
2 cups low-fat peach yogurt
2 cups sliced or diced fresh or thawed frozen peaches
preparation
Combine gingersnaps and pecans. Spoon 1 tablespoon of the mixture into each of four parfait or wine glasses. Layer each parfait as follows: ¼ cup yogurt, ¼ cup peaches, 1 tablespoon gingersnap mixture, ¼ cup yogurt, ¼ cup peaches, and 1 tablespoon gingersnap mixture. Serve immediately or chill up to 2 hours before serving.
substitutions: Toasted walnuts may replace the pecans. Look for peach soy yogurt, and try it instead of the dairy yogurt. Soy yogurt will work beautifully, for both breakfast and dessert. Add a teaspoon of maple syrup for extra sweetness, drizzled right on top.
tips: A drizzle of peach liqueur will turn this breakfast into an evening dessert. A little minced crystallized ginger will add spice. Look for chocolate-covered ginger in specialty shops and health food markets: diced into little nuggets of sweet spice, it adds a whole new dessert dimension to this dish.
