24 ounces low-fat soy vanilla yogurt, such as White Wave brand
4 teaspoons honey
½ teaspoon pure vanilla extract
1 cup hulled, quartered strawberries
1 cup raspberries
1 cup blueberries
1 cup diced honeydew melon
½ cup Grape-Nuts (or similar) cereal
preparation
In a medium bowl, combine yogurt, honey, and vanilla; mix well. In four large goblets or clear dessert dishes, arrange fruit and yogurt mixture in four layers. Top with cereal.
substitutions: Low-fat vanilla yogurt may replace soy yogurt, blackberries may replace blueberries, and cantaloupe may replace honeydew melon.
