1 cup fresh or frozen cranberries
1 cup orange juice
½ cup dried cranberries
3 tablespoons pure maple syrup
11/3 cups low-fat vanilla frozen yogurt
1 teaspoon finely shredded orange peel
preparation
Combine fresh or frozen cranberries, orange juice, and dried cranberries in a medium saucepan. Bring to a boil over high heat. Reduce heat; simmer uncovered 7 to 8 minutes or until cranberries are popped and sauce thickens slightly. Remove from heat; stir in syrup. Serve warm, at room temperature, or chilled over frozen yogurt. Garnish with orange peel.
substitutions: Coffee frozen yogurt may replace the vanilla, and dried cherries may replace the cranberries. If you use coffee frozen yogurt and can find a great-tasting brand, you can use its fat-free version; if you use vanilla, however, choose the 1%-fat variety instead of the fat-free version.
tips: Splashing 2 teaspoons of Cointreau, Grand Marnier, or Triple Sec over the top adds an elegant touch of orange-flavored liqueur. Try any or all. Combining fresh and dried fruit is an easy way to double flavor: Fresh fruit always has more juiciness, and dried fruit always has more sweetness. Together, they pack a flavor wallop.
